Roast Summer Peaches

When it comes to dessert I tend to go with the seasons again. During this so-called Summer I cannot resist deliciously juicy peaches, roasted with a hint of vanilla or spice.

Depending on numbers, half the peaches and remove the stone. With cut side up sprinkle a couple of teaspoons of soft brown sugar, a dust of cinnamon or a split vanilla pod, a small knob of butter in each peach half and squeeze the juice of 1 or 2 oranges.
Roast at 160°c for approx 30 mins-or until the peaches are soft and golden. Serve with a good quality vanilla ice cream and some biscotti or shortbread.
