Chargrilled Courgette, Feta and Rocket Salad

I am forever experimenting with salads and enjoy combining flavours and textures. Personally I think the most important ingredients in salads are griddled or roast fruit/vegetables, for example peppers, courgettes, pears and tomatoes. Roasting brings out wonderful deep flavours, softens the flesh and intensifies their sweetness. Try different seeds or fresh herbs and try different dressings using olive oil, red or white wine vinegar, lemon juice, mustards, balsamic vinegar… the options are endless!

One small handful of fresh mint, chopped

The rind and juice of one lemon
A pinch of sugar
Olive oil
Salt and black pepper
Four courgettes cut into thin diagonal slices
200g of feta cheese cut into cubes
200g of rocket
Two tablespoons of pine nuts, lightly toasted

Make the dressing by whisking three tablespoons of olive oil with mint, lemon juice, lemon rind, sugar, salt and pepper. Brush the courgette slices with a little olive oil and grill (or griddle) the courgettes for about two minutes on each side or until tender. Put the rocket into a large serving bowl, add the warm courgettes, crumble over the feta and drizzle the dressing. Toss to combine, sprinkle with the pine nuts and serve when still warm.
