Baked Shallots with Goat's Cheese

This is such a beautiful and simple dish. With a chilled glass of your favourite white, you will be in food heaven!

Banana Shallots (available from good fruit & veg shops/local market) 2 or 3 per person
Olive Oil
A couple of sprigs of fresh thyme
Goats cheese-St Tola is my favourite

Drizzle the shallots (in their skins) with olive oil, sprinkle with the fresh thyme and roast for approx 20 mins at 160°C, until soft to touch and wonderfully golden inside.
Cut each shallot lengthways adding the goats cheese, another drizzle of olive oil and the thyme leaves. Serve with gingergirl pear & walnut chutney for a delicious starter.
This recipe is also perfect as a lunch or supper with extra shallots and crusty bread.
